  • 1 ½ cups cottage cheese – Adds moisture and a creamy texture.
  • 2 ½ cups all-purpose flour – For the perfect roll dough.
  • 1 tablespoon sugar – A touch of sweetness to balance the flavors.
  • 1 teaspoon salt – To enhance the flavor.
  • 2 teaspoons baking powder – Helps the rolls rise.
  • ¼ cup butter, softened – For flavor and richness.
  • 1 large egg – To bind the dough.
  • 1 teaspoon garlic powder (optional) – Adds a savory kick.
  • 1 tablespoon dried herbs (optional) – Such as parsley, thyme, or rosemary for extra flavor.

Instructions

Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or grease it lightly with cooking spray.

Step 2: Mix the Dough
In a large mixing bowl, combine the cottage cheese, sugar, salt, baking powder, and garlic powder (if using).
Stir until smooth and well-combined.
Add the flour and mix until just combined. You should have a soft, slightly sticky dough.
Stir in the softened butter and egg, and mix again until smooth. If you’re using herbs, fold them in at this stage.

Step 3: Shape the Rolls
Lightly flour your work surface and turn the dough out onto it.
Roll the dough out into a rectangle or a rough square about ½ inch thick.
Cut the dough into small squares or use a biscuit cutter to cut into round shapes. Aim for about 12 rolls, depending on your desired size.

Step 4: Bake the Rolls
Place the rolls onto the prepared baking sheet.
Bake in the preheated oven for 15-18 minutes, or until golden brown on top and a toothpick inserted comes out clean.

Step 5: Serve & Enjoy!
Remove from the oven and let cool slightly before serving. These rolls are perfect fresh out of the oven with a little butter, or served alongside any meal.

Notes

Don’t Overwork the Dough – Mix the dough until just combined to keep the rolls soft and tender.
Use Full-Fat Cottage Cheese – For the best flavor and texture, use full-fat cottage cheese.
