  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/3 cup vegetable oil (80 ml)
  • 1/2 cup brown sugar (100 grams) (packed)
  • 1/4 cup granulated sugar (50 grams)
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/4 cup sour cream (60 ml)
  • 1 cup pure pumpkin (240 ml)
  • 1/2 cup powdered sugar (55 grams)
  • 12 tablespoons cream or milk

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin pan with papers.
  2. In a bowl, mix flour, brown sugar, granulated sugar, and cinnamon for the streusel topping. Add melted butter until crumbly.
  3. In another bowl, combine dry muffin ingredients: flour, cinnamon, pumpkin pie spice, baking powder, baking soda, and salt.
  4. In a large bowl, blend vegetable oil, sugars, eggs, vanilla extract, sour cream, and pumpkin until smooth.
  5. Gradually add the dry mixture to the wet ingredients; stir until just combined.
  6. Fill muffin cups two-thirds full and top generously with streusel.
  7. Bake for about 25 minutes or until a toothpick comes out clean.
  8. Cool slightly before drizzling with glaze made from powdered sugar mixed with cream or milk.
