  • 1 2/3 cups all-purpose flour
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 1/2 tsp pumpkin pie spice
  • 1 cup butter (melted, cooled)
  • 1 cup sugar
  • 3/4 cup packed brown sugar
  • 1 egg yolk (at room temperature)
  • 2 tsp vanilla extract
  • 1 cup pumpkin puree (blotted to remove moisture)
  • 2 cups butterscotch chips (divided)

Instructions

  1. Preheat your oven to 350°F and line baking sheets with parchment paper.
  2. In a large bowl, combine oats, flour, baking soda, cinnamon, and pumpkin pie spice.
  3. In another bowl, whisk together melted butter, sugar, brown sugar, egg yolk, vanilla extract, and pumpkin puree until smooth.
  4. Gradually add the wet mixture to the dry ingredients and stir until just combined.
  5. Fold in 1 1/2 cups of butterscotch chips.
  6. Drop heaping tablespoonfuls of dough onto prepared sheets and flatten slightly. Top each with additional butterscotch chips.
  7. Bake for about 13–15 minutes until edges are golden and centers are set.
  8. Let cool on the baking sheets for five minutes before transferring to wire racks.
