Ingredients

  • 360 g pasta shells
  • 1 kg butternut squash pumpkin
  • 8 garlic cloves
  • 180 g feta cheese
  • 2 large handfuls baby spinach
  • ¼ cup extra virgin olive oil
  • 8 sprigs of thyme
  • Salt and pepper to taste
  • 1 handful walnuts (for topping)
  • Chilli flakes (optional)

Instructions

  1. Preheat your oven to 200°C/400°F.
  2. Peel and chop the butternut squash into 2cm cubes; place in an oven-safe dish.
  3. Add unpeeled garlic cloves around the pumpkin; sprinkle with thyme, drizzle with olive oil, and season with salt and pepper.
  4. Place feta cheese in the center of the dish; drizzle with more olive oil and top with additional thyme.
  5. Roast for about 25 minutes until pumpkin is tender and feta has softened.
  6. During the last 10 minutes of roasting, boil heavily salted water in a large pot; cook pasta according to package instructions, saving some pasta water before draining.
  7. Once roasted, mash garlic in the dish and break up feta; stir in baby spinach and drained pasta along with reserved pasta water until creamy.
  8. Serve topped with walnuts and chilli flakes if desired.
