  • 1/2 cup plain yogurt
  • 2 pounds boneless, skinless chicken thighs (or chicken breast)
  • 1 tablespoon grated ginger
  • 1 tablespoon grated garlic
  • 2 tablespoons coconut oil
  • 1 onion, chopped
  • 2 tablespoons butter (or non-dairy alternative)
  • 1 (14 oz) can full-fat coconut milk
  • 1 cup pumpkin puree
  • Spices: garam masala, turmeric, chili powder, coriander, cumin

Instructions

  1. In a medium bowl, mix yogurt, ginger, garlic, garam masala, turmeric, chili powder, and salt. Coat chicken pieces with marinade and let sit for at least 30 minutes.
  2. Heat coconut oil in a large skillet over medium heat. Brown marinated chicken pieces on all sides (about 3 minutes). Remove from pan.
  3. In the same skillet, sauté chopped onion in butter until soft (5-7 minutes). Add ginger, garlic, tomato paste, spices; cook for another 2-3 minutes.
  4. Stir in coconut milk and pumpkin puree; simmer for about 10 minutes until thickened.
  5. Return chicken to skillet; simmer for an additional 8-10 minutes until cooked through and bubbly. Adjust seasoning if necessary.
  6. Garnish with fresh cilantro before serving.
