  • 1 small fennel bulb, diced
  • 1.5 pounds ground beef
  • 1.75 cups beef broth (or chicken/vegetable broth)
  • 3 cups puréed tomatoes
  • Fresh thyme and ricotta for serving

Instructions

  2. Stir in diced pumpkin and fennel; cook for about 8 minutes until slightly tender.

  4. Season with thyme, sage, marjoram, chili flakes, salt, and pepper. Pour in the broth and add a bay leaf; simmer for about 10 minutes.
  5. Stir in puréed tomatoes and tomato paste; cover and simmer until pumpkin is tender.
