To make these delicious pancakes, you’ll need:

  • 2 medium apples (preferably a sweet-tart variety like Granny Smith or Honeycrisp)
  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 large egg
  • 1 cup milk (whole milk or a milk alternative)
  • 1 teaspoon vanilla extract
  • 2 tablespoons vegetable oil (or melted butter)
  • Powdered sugar (for dusting, optional)

Instructions

Step 1: Prepare the Apples

  1. Peel, core, and grate the apples using a box grater or food processor. Place the grated apples in a bowl, and if they release too much liquid, gently squeeze out some excess moisture with a clean kitchen towel or paper towel.

Step 2: Make the Pancake Batter

  1. In a mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk the egg, milk, and vanilla extract together.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined (it’s okay if the batter is a little lumpy).
