Ingredients
- 15 oz Fresh pineapple
- 2 large Eggs
- 1 ¼ cups Sugar
- ½ cup Vegetable oil
- 1 cup Sour cream
- 1 teaspoon Vanilla extract
- Juice and zest from 1 Lime
- 2 ¼ cups All-purpose flour
- 2 teaspoons Baking powder
- ⅛ teaspoon Fine salt
Instructions
- Preheat the oven to 355°F/180°C. Prepare a 9-inch spring-form cake pan by greasing it and lining the bottom with parchment paper.
- Core and dice half of the fresh pineapple; slice the other half into thin rounds.
- In a mixing bowl, beat eggs and sugar together until pale and fluffy. Gradually add vegetable oil, sour cream, vanilla extract, lime juice, and zest until smooth.
- In another bowl, combine flour, baking powder, and salt. Gently fold the dry ingredients into the wet mixture until just combined.
- Pour half of the batter into the prepared pan, layer with diced pineapple, followed by the remaining batter and sliced pineapple on top.
- Bake for approximately 40 minutes or until a toothpick inserted comes out clean. Let cool before serving.
