Instructions
Step 1: Bake the Fries
-
Preheat oven according to package instructions (typically 425°F / 220°C).
-
Spread fries on a baking sheet in a single layer.
-
Drizzle with olive oil and season with a little salt.
-
Bake until golden and crispy, about 25–30 minutes, flipping halfway through.
-
While fries bake, prepare the steak and cheese sauce.
Step 2: Cook the Philly Steak and Veggies
-
Heat olive oil in a large skillet over medium-high heat.
-
Add sliced onions and peppers. Sauté for 4–5 minutes until softened and lightly browned.
-
Push veggies to one side of the pan, add sliced steak to the other side.
-
Cook steak for 3–4 minutes until browned, seasoning with garlic powder, salt, and pepper.
-
Stir everything together and remove from heat once the steak is fully cooked.
Step 3: Make the Cheese Sauce
-
In a saucepan, melt butter over medium heat.
-
Whisk in flour and cook for 1 minute to form a roux.
-
Gradually whisk in the milk, stirring constantly to avoid lumps.
-
Once the sauce thickens, stir in shredded provolone and mozzarella until melted and smooth.
-
Season with a pinch of salt and pepper. Keep warm on low heat.
Step 4: Assemble the Cheese Fries
-
Transfer hot fries to a large serving platter or baking dish.
-
Spoon steak and veggie mixture evenly over the fries.
-
Drizzle with generous amounts of warm cheese sauce.
-
Add optional toppings like jalapeños, tomatoes, or herbs.
Step 5: Serve Immediately
-
Serve the Philly Steak Cheese Fries hot and gooey.
-
Provide forks or let everyone dig in with their hands!
Notes
Use Thin-Sliced Steak – Ask your butcher for thin cuts or partially freeze and slice at home.
Don’t Overcook – Steak cooks quickly; sear just until browned.
Keep Sauce Warm – A thickened cheese sauce will spread better over hot fries.
Bake Until Crispy – Fries should be golden and sturdy to hold all the toppings.
Make It Spicy – Add crushed red pepper or sriracha to the cheese sauce.
