Ingredients

Scale

For the Meatloaf:

  • 1 ½ lbs ground beef (or ground turkey for a lighter version)

  • 1 small green bell pepper, finely chopped

  • 1 small onion, finely chopped

  • 1 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 cup shredded provolone or mozzarella cheese

  • ½ cup breadcrumbs

  • 1 large egg

  • 2 tbsp ketchup

  • 1 tbsp Worcestershire sauce

  • 1 tsp dried parsley

  • ½ tsp salt

  • ½ tsp black pepper

For the Topping:

  • 4 slices provolone cheese

  • Optional: sautéed bell peppers and onions for garnish

Instructions

Step 1: Preheat the Oven

  1. Preheat your oven to 375°F (190°C).

  2. Lightly grease a loaf pan or line a baking sheet with foil.

Step 2: Sauté the Vegetables

  1. In a skillet, heat olive oil over medium heat.

  2. Add chopped peppers, onions, and garlic.

  3. Sauté for 3–5 minutes until softened. Let cool slightly.

Step 3: Make the Meatloaf Mixture

  1. In a large mixing bowl, combine ground beef, sautéed vegetables, breadcrumbs, egg, ketchup, Worcestershire sauce, parsley, salt, and pepper.

  2. Mix just until combined—don’t overwork.

  3. Gently fold in the shredded provolone cheese.

Step 4: Shape and Bake

  1. Form the mixture into a loaf shape and place in the loaf pan or on a prepared baking sheet.

  2. Bake for 40–45 minutes, or until the internal temperature reaches 160°F (71°C).

Step 5: Add the Cheese Topping

  1. Remove meatloaf from the oven and top with provolone slices.

  2. Return to oven for 5–7 minutes, or until cheese is melted and bubbly.

  3. Optional: broil for 1–2 minutes for a golden finish.

Step 6: Rest and Serve

  1. Let the meatloaf rest for 5–10 minutes before slicing.

  2. Garnish with extra sautéed peppers and onions if desired.

  3. Serve hot with your favorite sides.

Notes

Don’t Overmix – Mix ingredients just until combined to avoid a dense texture.
Use Fresh Veggies – Sautéing them first ensures great flavor and moisture.
Let It Rest – Resting helps the meatloaf set and makes slicing easier.
Check the Temp – Always use a thermometer to avoid overcooking.
Line Your Pan – For easy cleanup and neat slices.
