Ingredients
For the Meatloaf:
-
1 ½ lbs ground beef (or ground turkey for a lighter version)
-
1 small green bell pepper, finely chopped
-
1 small onion, finely chopped
-
1 tbsp olive oil
-
2 cloves garlic, minced
-
1 cup shredded provolone or mozzarella cheese
-
½ cup breadcrumbs
-
1 large egg
-
2 tbsp ketchup
-
1 tbsp Worcestershire sauce
-
1 tsp dried parsley
-
½ tsp salt
-
½ tsp black pepper
For the Topping:
-
4 slices provolone cheese
-
Optional: sautéed bell peppers and onions for garnish
Instructions
Step 1: Preheat the Oven
-
Preheat your oven to 375°F (190°C).
-
Lightly grease a loaf pan or line a baking sheet with foil.
Step 2: Sauté the Vegetables
-
In a skillet, heat olive oil over medium heat.
-
Add chopped peppers, onions, and garlic.
-
Sauté for 3–5 minutes until softened. Let cool slightly.
Step 3: Make the Meatloaf Mixture
-
In a large mixing bowl, combine ground beef, sautéed vegetables, breadcrumbs, egg, ketchup, Worcestershire sauce, parsley, salt, and pepper.
-
Mix just until combined—don’t overwork.
-
Gently fold in the shredded provolone cheese.
Step 4: Shape and Bake
-
Form the mixture into a loaf shape and place in the loaf pan or on a prepared baking sheet.
-
Bake for 40–45 minutes, or until the internal temperature reaches 160°F (71°C).
Step 5: Add the Cheese Topping
-
Remove meatloaf from the oven and top with provolone slices.
-
Return to oven for 5–7 minutes, or until cheese is melted and bubbly.
-
Optional: broil for 1–2 minutes for a golden finish.
Step 6: Rest and Serve
-
Let the meatloaf rest for 5–10 minutes before slicing.
-
Garnish with extra sautéed peppers and onions if desired.
-
Serve hot with your favorite sides.
Notes
Don’t Overmix – Mix ingredients just until combined to avoid a dense texture.
Use Fresh Veggies – Sautéing them first ensures great flavor and moisture.
Let It Rest – Resting helps the meatloaf set and makes slicing easier.
Check the Temp – Always use a thermometer to avoid overcooking.
Line Your Pan – For easy cleanup and neat slices.
