Ingredients
- 2 pounds ground beef
- 1 cup breadcrumbs
- 2 beaten eggs
- 1/2 cup milk
- 1/2 cup diced green bell pepper
- 1/2 cup diced onion
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
- 8 ounces sliced mushrooms
- 6 slices Provolone cheese
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F and grease a 9×5 inch loaf pan.
- In a large bowl, mix ground beef, breadcrumbs, beaten eggs, milk, diced bell pepper, diced onion, garlic powder, salt, and pepper until just combined.
- In a skillet, heat olive oil over medium heat. Sauté onions, bell peppers, and mushrooms until softened; season with salt and pepper.
- Press half the meat mixture into the bottom of the loaf pan. Layer sautéed vegetables and Provolone cheese on top before covering with remaining meat mixture.
- Bake for 45 minutes; then add shredded cheese on top and return to the oven for another 10-15 minutes until melted.
- Let rest for 10 minutes before slicing.
