- Yellow onions
- Butter
- Worcestershire sauce or coconut aminos

- Fresh thyme
- Beef stock
- Bell peppers

Instructions
- Heat oil in a large Dutch oven over medium heat. Add onions and sauté until soft, about 12 minutes.
- Stir in butter and continue cooking until onions are browned, around 10 minutes.
- Add Worcestershire sauce, garlic, thyme, salt, and pepper; cook for 5 more minutes.
- Deglaze with cooking apple juice and scrape the bottom of the pan.
- Pour in beef stock, bring to a boil, then reduce heat and simmer for 25 minutes.
- Sauté bell peppers in the remaining oil until softened, then add beef until cooked through.
- Mix peppers and beef into the soup; adjust seasoning as needed.
- Remove bay leaves. Distribute soup into ramekins topped with toasted bun pieces and cheeses.
- Broil until cheese is bubbly and golden brown.
