Ingredients

  • Avocado oil or olive oil
  • Yellow onions
  • Butter
  • Worcestershire sauce or coconut aminos
  • Garlic
  • Fresh thyme
  • Beef stock
  • Bell peppers
  • Thinly sliced beef (or chicken)
  • Provolone cheese
  • Gruyere cheese

Instructions

  1. Heat oil in a large Dutch oven over medium heat. Add onions and sauté until soft, about 12 minutes.
  2. Stir in butter and continue cooking until onions are browned, around 10 minutes.
  3. Add Worcestershire sauce, garlic, thyme, salt, and pepper; cook for 5 more minutes.
  4. Deglaze with cooking apple juice and scrape the bottom of the pan.
  5. Pour in beef stock, bring to a boil, then reduce heat and simmer for 25 minutes.
  6. Sauté bell peppers in the remaining oil until softened, then add beef until cooked through.
  7. Mix peppers and beef into the soup; adjust seasoning as needed.
  8. Remove bay leaves. Distribute soup into ramekins topped with toasted bun pieces and cheeses.
  9. Broil until cheese is bubbly and golden brown.
  10. Serve hot with fresh thyme garnish.
