  • 1 lb ground beef or thinly sliced steak (like ribeye)

  • 1 small onion, thinly sliced

  • 1 small green bell pepper, thinly sliced

  • 1 small red bell pepper, thinly sliced

  • 2 cloves garlic, minced

  • 1 tbsp olive oil

  • 1 tsp Worcestershire sauce

  • ½ tsp salt

  • ¼ tsp black pepper

  • 8 slices provolone cheese (cut into strips)

  • 12 eggroll wrappers

  • 1 egg, beaten (for sealing)

  • Vegetable oil, for frying

Optional Add-ins:

  • Mushrooms, sautéed

  • Jalapeños for a spicy kick

  • A drizzle of cheese sauce inside for extra gooeyness


Instructions

Step 1: Cook the Filling
Heat olive oil in a skillet over medium heat.
Add the sliced onions and bell peppers and sauté for 4–5 minutes until softened.
Add the ground beef (or steak) and cook until browned and cooked through.
Stir in garlic, Worcestershire sauce, salt, and pepper.
Remove from heat and let the mixture cool slightly.

Step 2: Assemble the Eggrolls
Lay an eggroll wrapper on a clean surface with a corner pointing toward you (like a diamond).
Place a strip of provolone cheese and about 2–3 tablespoons of the meat mixture in the center.
Fold the bottom corner over the filling, fold in the sides, and roll up tightly.
Brush the top corner with beaten egg to seal.
Repeat with the remaining wrappers and filling.

Step 3: Fry the Eggrolls
Heat about 2 inches of vegetable oil in a deep skillet to 350°F (175°C).
Fry eggrolls in batches for 3–4 minutes, turning occasionally, until golden brown and crispy.
Drain on a paper towel-lined plate.

Step 4: Serve
Serve hot with your favorite dipping sauces like cheese sauce, ranch, or spicy mayo.

Notes

Cool the Filling – Prevents the wrappers from getting soggy.
Seal Tightly – Helps prevent leaks while frying.
Don’t Overfill – Too much filling makes rolling tricky and can cause tearing.
Fry at the Right Temperature – Too low and they’ll be greasy; too high and they’ll burn.
Keep Them Warm – Place fried eggrolls in a 200°F oven to stay crispy until serving.
