Ingredients
- 2 cups long grain white rice
- 1 ½ tablespoons olive oil
- ¾ cup chopped white or yellow onion
- 2 cloves garlic (minced)
- 2 ½ cups water (or low sodium chicken broth or vegetable broth)
- 1 teaspoon salt (or to taste)
- 1 ½ teaspoons chili powder
- 1 teaspoon ground cumin
- ½ teaspoon garlic powder
- ½ teaspoon dried oregano
- 8 ounces tomato sauce
- Chopped fresh cilantro (optional, for serving)
Instructions
- Rinse the rice under cold running water in a fine mesh strainer and drain.
- In your Instant Pot, heat olive oil using the sauté function. Add chopped onions and sauté for about 3 minutes until softened.
- Stir in minced garlic and cook for an additional 30 seconds before turning off the sauté function.
- Pour in water or broth and scrape any bits from the bottom of the pot. Add salt, chili powder, ground cumin, garlic powder, dried oregano, tomato sauce, and rinsed rice; stir to combine.
- Close the lid and set the steam release valve to sealing. Pressure cook on high for 4 minutes.
- Allow natural pressure release for 15 minutes before carefully venting any remaining steam.
- Fluff the rice with a fork and serve warm topped with fresh cilantro if desired.
