Ingredients

Scale
  • 2 cups plain Greek yogurt (full-fat or low-fat)

  • ½ cup natural peanut butter (creamy or crunchy)

  • ¼ cup honey or maple syrup

  • 1 tsp vanilla extract

  • ¼ cup mini chocolate chips (optional)

  • 2 tbsp chopped peanuts (optional)

Optional Add-ins:

  • Swirl of jam for PB&J flavor

  • Shredded coconut

  • Chopped granola for crunch

  • Sea salt sprinkle for a sweet-salty combo

Instructions

Step 1: Prepare the Baking Dish
Line an 8×8-inch baking dish with parchment paper, leaving an overhang for easy removal.

Step 2: Mix the Base
In a large mixing bowl, stir together Greek yogurt, peanut butter, honey, and vanilla extract until smooth and creamy.

Step 3: Add Toppings
Fold in mini chocolate chips if using.
Spread the mixture evenly into the prepared baking dish.
Sprinkle chopped peanuts or extra chocolate chips on top for a little crunch.

Step 4: Freeze
Freeze for 3–4 hours, or until completely firm.

Step 5: Slice into Bars
Lift the frozen yogurt slab out of the dish using the parchment overhang.
Let sit at room temperature for 3–5 minutes to soften slightly, then slice into bars or squares.

Step 6: Serve
Enjoy immediately or store in a freezer-safe bag for easy grab-and-go snacks.

Notes

Use Natural Peanut Butter – It mixes easier and has no added sugars or oils.
Sweeten to Taste – Add more honey if you prefer sweeter bars.
Line the Dish Well – Parchment paper helps you lift and cut easily.
Let It Soften Slightly – Makes slicing much easier and prevents cracking.
Customize It – Add swirls of jam, nuts, or even chopped pretzels for variety.
