  • 1 ½ cups diced fresh, frozen (thawed), or canned peaches (well-drained)

  • ½ cup chopped pecans (toasted if desired)

Optional Topping:

  • 2 tbsp chopped pecans

  • 1 tbsp brown sugar

  • Pinch of cinnamon


Instructions

Step 1: Prep the Oven and Pan
Preheat oven to 350°F (175°C).
Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.

Step 2: Mix the Dry Ingredients
In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
Set aside.

Step 3: Combine the Wet Ingredients
In a large bowl, whisk together eggs, oil, granulated sugar, brown sugar, and vanilla until smooth and well blended.

Step 4: Add the Peaches and Pecans
Fold in the diced peaches and chopped pecans gently.
If using canned peaches, be sure to blot them with paper towels to reduce moisture.

Step 5: Combine Everything
Gradually stir the dry ingredients into the wet mixture.
Mix just until combined—don’t overmix to avoid a dense loaf.

Step 6: Transfer and Top (Optional)
Pour the batter into the prepared loaf pan and smooth the top.
Sprinkle with the optional topping of chopped pecans, brown sugar, and cinnamon for extra crunch and sweetness.

Step 7: Bake the Bread
Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
Check at 45 minutes and tent with foil if the top is browning too quickly.

Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
