  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced

  • ½ teaspoon black pepper
  • 10 ounces diced tomatoes, drained
  • 2 ½ cups beef broth
  • ¼ cup heavy cream
  • 1 ½ cups shredded cheddar cheese or cheese blend

Instructions

  1. In a large oven-safe skillet over medium-high heat, brown the ground beef until fully cooked; drain excess grease.
  2. Add diced onions and minced garlic to the skillet; sauté for 3-4 minutes until softened.
  3. Stir in salt, black pepper, and Italian seasoning until combined.
  4. Add tortellini, drained diced tomatoes, and beef broth; bring to a boil. Cover and simmer for about 5 minutes.
  5. Remove the cover and cook until most liquid is absorbed. Stir in heavy cream and half of the shredded cheese; top with remaining cheese.
