Ingredients
For the Skillet:
1 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 lb ground beef or ground turkey
1½ cups dry orzo pasta
2 cups beef broth (or vegetable broth)
1 cup milk (dairy or unsweetened plant-based)
½ cup ketchup
1 tbsp yellow mustard
½ tsp salt
½ tsp black pepper
¼ tsp smoked paprika (optional)
For the Cheese Sauce:
1½ cups shredded cheddar cheese
½ cup shredded mozzarella (optional for extra meltiness)
2 tbsp cream cheese (for creaminess)
To Finish:
¼ cup diced dill pickles (or bread & butter pickles for sweetness)
Fresh chopped parsley (optional)
Extra shredded cheese for topping
Cherry tomatoes or lettuce (optional, for burger vibes)
Instructions
Step 1: Cook the Aromatics & Meat

Heat olive oil in a large skillet over medium heat.

Add chopped onion and cook for 2–3 minutes until softened.

Stir in minced garlic and cook for 1 more minute.

Add ground beef or turkey, breaking it up with a spoon. Cook until browned and fully cooked—about 6–8 minutes. Drain excess fat if needed.
Step 2: Add Orzo and Liquids
5. Stir in the orzo, beef broth, milk, ketchup, mustard, salt, pepper, and smoked paprika.
6. Bring to a gentle boil, then reduce heat to low.
7. Cover and simmer for 10–12 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
Step 3: Stir in the Cheese
8. Remove the skillet from heat.
9. Stir in cheddar, mozzarella, and cream cheese until melted and creamy.
10. If the sauce is too thick, add a splash more milk to loosen it.
Step 4: Finish & Serve
