  • 4 boneless skinless chicken breasts or thighs
  • 1 tablespoon olive oil
  • Salt and pepper (to taste)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1/2 cup heavy cream or whole milk
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • Fresh chopped parsley (for garnish)

Instructions

  1. Season the chicken with salt and pepper. In a large skillet or Dutch oven, heat olive oil over medium-high heat and sear the chicken for 4–5 minutes on each side until golden brown.
  2. Remove the chicken from the skillet and set aside. In the same skillet, melt butter and sauté chopped onion for about 2–3 minutes until soft. Add minced garlic and optional mushrooms; cook for another minute.
  3. Stir in the rice and toast for about 1–2 minutes until slightly golden.
  4. In a bowl, whisk together cream of chicken soup, sour cream, garlic powder, onion powder, thyme, paprika, and cayenne pepper (if using).
  5. Pour in chicken broth and heavy cream; mix well. Add the seared chicken back into the skillet.
  6. Cover and simmer on low heat for 20–25 minutes until rice is tender and chicken is cooked through (165°F).
  7. Let sit uncovered for about 5 minutes before serving.
