- 2 pounds beef chuck roast or beef stew meat, cubed

- 3 tablespoons vegetable oil
- 1/2 cup red grape juice
- 4 cups low-sodium beef broth
- 1–2 teaspoons Worcestershire sauce
- 1 teaspoon dried rosemary
- 1 teaspoon dried parsley
- 3 large potatoes, peeled and cubed
- 4 carrots, cut into 1-inch pieces
- 4 stalks celery, cut into 1-inch pieces
- 1 large onion, chopped
- 2 teaspoons cornstarch mixed with cold water
Instructions
- Season beef cubes with salt and black pepper.
- Heat vegetable oil in a Dutch oven over medium-high heat. Sear beef until browned on all sides; remove.
- Deglaze the pot with red grape juice, scraping up browned bits.
- Add beef broth and Worcestershire sauce; return seared beef to the pot.
- Stir in rosemary, parsley, and additional black pepper. Bring to a boil, then reduce heat and simmer for one hour.
- Prepare vegetables while simmering; add them along with the cornstarch slurry after one hour.
- Continue simmering for another hour until meat is fork-tender and vegetables are soft.
