- 1 1/4 cups rolled oats
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 3/4 cup unsalted butter (melted)
- 1 teaspoon vanilla extract
- 1 (14 oz.) can sweetened condensed milk
- 1 tablespoon lemon zest
- 1/3 cup lemon juice (about 2 1/2 large lemons)
- 2 large egg yolks
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine flour, oats, salt, and baking soda. Stir in granulated and brown sugars.
- Add melted butter and vanilla extract; mix until crumbly.
- Press two-thirds of the crust mixture into a greased 9×13-inch baking pan.
- In another bowl, whisk together sweetened condensed milk, lemon zest, lemon juice, and egg yolks until smooth.
- Pour the lemon filling over the crust and spread evenly with a spatula.
- Sprinkle the remaining crust mixture on top of the lemon filling.
- Bake for about 40 minutes or until golden brown and filling is set.
