  • 1 1/4 cups rolled oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 3/4 cup unsalted butter (melted)
  • 1 teaspoon vanilla extract
  • 1 (14 oz.) can sweetened condensed milk
  • 1 tablespoon lemon zest
  • 1/3 cup lemon juice (about 2 1/2 large lemons)
  • 2 large egg yolks
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine flour, oats, salt, and baking soda. Stir in granulated and brown sugars.
  3. Add melted butter and vanilla extract; mix until crumbly.
  4. Press two-thirds of the crust mixture into a greased 9×13-inch baking pan.
  5. In another bowl, whisk together sweetened condensed milk, lemon zest, lemon juice, and egg yolks until smooth.
  6. Pour the lemon filling over the crust and spread evenly with a spatula.
  7. Sprinkle the remaining crust mixture on top of the lemon filling.
  8. Bake for about 40 minutes or until golden brown and filling is set.
  9. Allow to cool completely before cutting into squares.
