Ingredients

  • 1½ cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ¼ tsp salt

  • 3 ripe bananas, mashed (about 1 cup)

  • ½ cup brown sugar

  • ¼ cup granulated sugar

  • ⅓ cup vegetable oil or melted butter

  • 1 large egg

  • 1 tsp vanilla extract

  • ½ cup Nutella (plus extra for topping if desired)

Optional Add-ins:

  • ½ cup chopped hazelnuts for crunch

  • A sprinkle of mini chocolate chips

  • A pinch of cinnamon for warmth


Instructions

Step 1: Preheat the Oven
Preheat your oven to 350°F (175°C).
Line a muffin pan with paper liners or lightly grease with non-stick spray.

Step 2: Mix Dry Ingredients
In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.

Step 3: Mix Wet Ingredients
In a large bowl, mash the bananas.
Whisk in the brown sugar, granulated sugar, oil, egg, and vanilla extract until smooth and combined.

Step 4: Combine Wet and Dry
Gradually add the dry ingredients to the wet ingredients, stirring just until combined.
Be careful not to overmix for the fluffiest muffins.

Step 5: Add Nutella
Warm the Nutella slightly in the microwave for about 10–15 seconds to make it easier to swirl.
Drop about 1 teaspoon of Nutella onto the top of each filled muffin cup.
Use a toothpick or skewer to gently swirl the Nutella into the batter.

Step 6: Bake
Bake for 18–22 minutes, or until a toothpick inserted into the muffin (avoiding the Nutella swirl) comes out clean.

Step 7: Cool & Serve
Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
Enjoy warm or at room temperature!

Notes

Use Ripe Bananas – The riper the better for natural sweetness and flavor.
Don’t Overmix the Batter – Stir just until the flour disappears to keep muffins tender.
Warm Nutella Slightly – Helps it swirl easily without sinking.
Use an Ice Cream Scoop – For evenly sized muffins.
