Ingredients
For the Crust:
-
1 cup chocolate cookie crumbs (like chocolate graham crackers or chocolate sandwich cookies, crushed)
-
3 tbsp melted butter
For the Mocha Cheesecake Filling:
-
8 oz cream cheese, softened
-
⅓ cup powdered sugar
-
1 tbsp unsweetened cocoa powder
-
1 tbsp instant coffee granules (or instant espresso powder)
-
2 tbsp warm water
-
1 tsp vanilla extract
-
¾ cup heavy cream, cold
-
½ cup semi-sweet chocolate chips, melted and slightly cooled
For Topping (Optional):
-
Whipped cream
-
Shaved chocolate or cocoa powder
-
Crushed chocolate-covered espresso beans
-
Mini chocolate chips
Instructions
Step 1: Make the Cookie Base
-
In a bowl, mix crushed chocolate cookies with melted butter until evenly moistened.
-
Divide the mixture evenly into the bottom of 6 serving cups or jars.
-
Press down gently to form a firm base using the back of a spoon. Set aside.
Step 2: Mix the Mocha Flavor Base
-
In a small bowl, dissolve the instant coffee granules in warm water. Set aside to cool.
-
In a large bowl, beat the softened cream cheese until smooth.
-
Add powdered sugar, cocoa powder, vanilla extract, and dissolved coffee. Beat again until fully combined.
Step 3: Melt the Chocolate
-
Melt chocolate chips in a microwave-safe bowl in 20-second bursts, stirring between each until smooth.
-
Let it cool slightly (but not harden), then stir it into the cream cheese mixture until rich and chocolatey.
Step 4: Whip the Cream
-
In a separate bowl, beat the cold heavy cream until stiff peaks form.
-
Gently fold the whipped cream into the mocha cheesecake mixture in two batches.
-
Mix until smooth and fluffy, being careful not to deflate the air.
Step 5: Assemble the Cups
-
Spoon or pipe the mocha cheesecake filling over the prepared crusts in each cup.
-
Smooth the tops with the back of a spoon.
-
Cover with plastic wrap and chill for at least 3 hours, or overnight, until firm.
Step 6: Garnish & Serve
-
Just before serving, top each cheesecake cup with whipped cream.
-
Garnish with chocolate curls, cocoa powder, or crushed chocolate-covered espresso beans.
-
Serve chilled and enjoy every silky spoonful.
Notes
Room Temp Cream Cheese – Ensures a lump-free, creamy filling.
Cool the Chocolate – Don’t add hot melted chocolate to the filling—it can seize the mixture.
Use Instant Espresso for Bold Flavor – If you want a stronger coffee taste, go with espresso powder.
Chill Thoroughly – At least 3 hours for the best set and flavor.
Make It Mini – Use shot glasses or mini dessert cups for party-perfect bites.
