  • 1 cup Old fashioned oats
  • 1/4 cup Maple syrup (or honey)
  • 24 oz. AE Dairy cottage cheese
  • 1 tbsp Vanilla extract
  • 3/4 cup Peanut butter (softened)
  • 1/2 cup Protein powder (chocolate or vanilla)
  • 1/2 cup Unsweetened cocoa powder
  • 1 tbsp Coconut oil (melted)
  • 1 cup Chocolate chips (divided)
  • Flaky sea salt (optional)

Instructions

  1. Blend oats, maple syrup, cottage cheese, vanilla extract, and peanut butter until smooth.
  2. In a large bowl, mix the blended mixture with protein powder and cocoa powder until fully combined. Fold in 1/4 cup chocolate chips.
  3. Scoop about one tablespoon of the mixture and roll into balls; place on a sheet pan and freeze for 5-10 minutes.
  4. Melt the remaining chocolate chips with coconut oil in the microwave.
  5. Dip each ball into the melted chocolate and place back on the sheet pan; sprinkle with flaky sea salt if desired.
  6. Chill in the fridge until set completely before enjoying.
