For the Spaghetti Bake:

  • 12 oz spaghetti

  • 2 tbsp olive oil

  • 1 medium onion, diced

  • 1 green bell pepper, chopped

  • 3 garlic cloves, minced

  • 2 cups cooked, shredded chicken

  • 1 can (10 oz) diced tomatoes with green chilies (like Rotel)

  • 1 can (10 oz) cream of chicken soup

  • ½ cup chicken broth

  • 1 tsp chili powder

  • ½ tsp cumin

  • Salt and pepper, to taste

For the Cheese Topping:

  • 1½ cups shredded Monterey Jack cheese

  • ½ cup shredded cheddar cheese

  • ¼ cup chopped fresh cilantro or green onions (optional)


Instructions

Step 1: Cook the Spaghetti
Bring a large pot of salted water to a boil.
Cook the spaghetti until al dente according to package instructions.
Drain and set aside.

Step 2: Sauté the Vegetables
In a large skillet, heat olive oil over medium heat.
Add the onion and bell pepper, and sauté for 4–5 minutes until softened.
Stir in garlic and cook for another 1 minute.

Step 3: Build the Sauce
Add the diced tomatoes with green chilies, cream of chicken soup, and chicken broth to the skillet.
Stir in chili powder, cumin, salt, and pepper.
Let the mixture simmer for 5 minutes to combine flavors.

Step 4: Add Chicken & Pasta
Stir in the shredded chicken and cooked spaghetti.
Toss until everything is well coated in the sauce.

Step 5: Assemble the Casserole
Preheat oven to 375°F (190°C).
Pour the spaghetti mixture into a greased 9×13-inch baking dish.
Top evenly with Monterey Jack and cheddar cheese.

 

Step 6: Bake Until Bubbly
Bake uncovered for 20–25 minutes or until cheese is melted and bubbly.
Remove from oven and let rest for 5 minutes before serving.
Garnish with chopped cilantro or green onions if desired.

Notes

Use Rotisserie Chicken – Saves time and adds great flavor.
Don’t Overcook Pasta – Al dente is best so it doesn’t get mushy when baked.
Add Heat – Use spicy diced tomatoes or a dash of hot sauce if you like it hot.
Mix Cheeses – Blend Monterey Jack with pepper jack for an extra kick.
Make It Ahead – Assemble and refrigerate, then bake when ready to serve.
