  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons baking powder

  • 1 large egg
  • 1/2 cup orange juice
  • Grated orange zest
  • 2 tablespoons melted butter
  • 1 cup fresh cranberries (halved)
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F and prepare a loaf pan by spraying it with non-stick spray or lining it with parchment paper.
  2. In a large mixing bowl, sift together the flour, sugar, baking soda, baking powder, and salt. Add the halved cranberries and stir until coated.
  3. In another bowl, beat the egg and mix in the orange juice and grated zest followed by the melted butter until combined.
  4. Gradually add the wet ingredients to the dry ingredients using a spatula to gently mix until just combined; do not overmix.
  5. Fold in the chopped walnuts and transfer the batter to the prepared loaf pan.
  6. Bake for 50-55 minutes or until a knife inserted into the center comes out clean.
  7. Let cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
