  • 4 tbsp unsalted butter, melted

  • ¼ cup sour cream

  • ¼ cup rainbow sprinkles (jimmies style – not nonpareils)

Instructions

Step 1: Preheat the Oven
Preheat oven to 325°F (160°C). Line a muffin tin with paper liners.

Step 2: Make the Crust
In a bowl, combine graham cracker crumbs, sugar, and melted butter.
Stir until the mixture resembles wet sand.
Spoon about 1 tablespoon into each liner and press down firmly to form a crust.
Bake for 5 minutes, then set aside to cool while you make the filling.

Step 3: Prepare the Cheesecake Batter
In a large bowl, beat softened cream cheese and sugar until smooth and creamy (about 2 minutes).
Add eggs one at a time, mixing on low speed.
Mix in vanilla and sour cream until just combined.
Gently fold in the rainbow sprinkles with a spatula—avoid overmixing to prevent color bleeding.

Step 4: Fill the Cups
Divide the batter evenly among the muffin cups, filling nearly to the top.
Tap the pan gently on the counter to release any air bubbles.

Step 5: Bake the Cheesecakes
Bake at 325°F for 18–22 minutes, or until centers are just set and slightly jiggly.
Remove from oven and let cool in the pan for 30 minutes.
Transfer to the fridge and chill for at least 2 hours or overnight.

Step 6: Decorate & Serve
Top with a swirl of whipped cream and a pinch of extra sprinkles just before serving.
