For the Base:
-
6 small flour tortillas
-
1 tbsp oil (for brushing or spraying)
For the Filling:
-
1 lb ground beef
-
1 packet (1 oz) taco seasoning
-
½ cup water
-
1 can (15 oz) refried beans
For the Sauce:
-
½ cup tomato sauce
-
1 tbsp taco sauce or enchilada sauce
-
½ tsp garlic powder
-
½ tsp onion powder
-
½ tsp cumin
-
Pinch of sugar
For the Toppings:
-
1 cup shredded cheddar cheese
-
1 cup shredded Monterey Jack or Mexican blend cheese
-
½ cup diced tomatoes
-
¼ cup sliced black olives (optional)
-
2 tbsp chopped green onions
Instructions
Step 1: Prep the Tortillas
Preheat oven to 400°F (200°C).
Place tortillas on a baking sheet and lightly brush or spray with oil.
Bake for 4–5 minutes per side until golden and crispy. Set aside.
(Alternatively, air fry at 375°F for 3–4 minutes per side.)
Step 2: Cook the Beef
In a skillet over medium heat, cook ground beef until browned.
Drain any excess fat.
Add taco seasoning and ½ cup water. Simmer for 5 minutes until thickened.
Step 3: Warm the Beans
In a small saucepan or microwave-safe bowl, warm the refried beans until soft and spreadable.
Step 4: Make the Sauce
In another small saucepan, mix tomato sauce, taco sauce, garlic powder, onion powder, cumin, and a pinch of sugar.
Simmer over low heat for 5 minutes to develop flavor.
Step 5: Assemble the Pizzas
Lay out 3 tortillas. Spread a thin layer of refried beans on each, followed by a scoop of seasoned beef.
Top with a second tortilla to make a pizza “sandwich.”
Spread 1–2 tablespoons of sauce on top of each.
Sprinkle with shredded cheese, diced tomatoes, olives, and green onions.
Step 6: Bake Until Melty
Return to oven and bake for 5–7 minutes, until the cheese is melted and bubbly.
Let cool slightly before slicing.
Step 7: Serve & Enjoy
Slice into wedges and serve warm with sour cream, salsa, or guacamole on the side.
Notes
Crisp the Tortillas – A crunchy base makes all the difference.
Spread Evenly – Keep beans and beef layers thin to avoid sogginess.
Customize Toppings – Add jalapeños, corn, or diced onions for extra flavor.
Use Pre-Shredded Cheese – Saves time and melts beautifully.
Double the Sauce – Make extra for dipping or drizzling.
