Instructions

Step 1: Prepare the Chicken Breasts
Place the chicken breasts on a cutting board. Using a sharp knife, carefully slice a pocket into the side of each chicken breast, being careful not to cut all the way through. If needed, use a meat mallet to gently flatten the chicken to an even thickness (this helps with even cooking).

Step 2: Make the Stuffing
In a bowl, combine the crumbled feta cheese, chopped Kalamata olives, sun-dried tomatoes, chopped basil, minced garlic, and dried oregano. Mix until everything is well incorporated.

Step 3: Stuff the Chicken
Stuff each chicken breast with the Mediterranean mixture, ensuring the filling is evenly distributed. Secure the opening with toothpicks or kitchen twine to hold the stuffing inside while cooking.

Step 4: Sear the Chicken
Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the stuffed chicken breasts and sear for 3-4 minutes per side until golden brown. This step adds flavor and helps seal in the juices.

Step 5: Bake the Chicken
Preheat your oven to 375°F (190°C). Transfer the seared chicken breasts to a baking dish and drizzle with the remaining tablespoon of olive oil. Bake for 20-25 minutes or until the chicken is cooked through (internal temperature should reach 165°F or 74°C).

Step 6: Serve and Enjoy
Remove the toothpicks or twine from the chicken before serving. Garnish with extra fresh basil if desired. Serve with a side of roasted vegetables, quinoa, couscous, or a simple salad for a complete meal.
