Ingredients
For the Chicken Filling:

For the Yogurt Sauce:

For the Pitas and Toppings:

4 whole wheat or regular pita pockets

1 cup chopped cucumber

1 cup cherry tomatoes, halved

½ cup red onion, thinly sliced

¼ cup crumbled feta cheese (optional)

¼ cup kalamata olives, sliced (optional)

Fresh parsley or mint for garnish
Instructions
Step 1: Prepare the Yogurt Sauce
In a small bowl, whisk together Greek yogurt, lemon juice, olive oil, grated garlic, and herbs.
Season with salt and pepper to taste. Chill in the fridge while you prepare the rest.
Step 2: Cook the Chicken Filling
Heat olive oil in a large skillet over medium heat.
Add chopped onion and garlic, sautéing for 2–3 minutes until fragrant.
Add ground chicken and cook, breaking it up with a spatula, until fully cooked—about 7–8 minutes.
Stir in cumin, coriander, smoked paprika, oregano, salt, and pepper.
Finish with lemon juice and cook for 1 more minute to blend flavors.
Step 3: Warm the Pitas
Gently warm the pita pockets in a dry skillet, toaster oven, or microwave until soft and pliable.
Step 4: Assemble the Pitas
Cut each pita in half and open the pockets.
Spoon the seasoned chicken mixture into each pita half.
Top with chopped cucumber, cherry tomatoes, red onion, and optional feta and olives.
Drizzle with the chilled yogurt sauce and garnish with fresh herbs.
Step 5: Serve and Enjoy
