Instructions
Step 1: Preheat Oven and Prep the Pan
Preheat your oven to 375°F (190°C).
Line a loaf pan with parchment paper or lightly grease it with oil or cooking spray.
Step 2: Prepare the Meatloaf Mixture
In a large bowl, combine the breadcrumbs and milk. Let sit for 2-3 minutes to absorb.
Add ground beef, chopped onion, garlic, eggs, Worcestershire sauce, ketchup, salt, pepper, thyme, and paprika.
Mix gently with clean hands or a spatula until just combined—don’t overmix.
Step 3: Shape and Bake
Transfer the meatloaf mixture to the prepared pan and press it in evenly.

Slowly pour in beef broth, whisking continuously to avoid lumps.
Add Worcestershire sauce, thyme, and season with salt and pepper.
Simmer for 5–7 minutes until thickened. Stir in cream if using, then remove from heat.
Step 5: Slice and Serve
Slice the rested meatloaf into thick slices.
Spoon the warm mushroom gravy generously over each slice.
Garnish with chopped parsley and serve with your favorite sides.
