• 2 cups cold mashed potatoes
• 1 cup shredded cheddar cheese (or your favorite cheese blend)
• 2 eggs
• ½ cup all-purpose flour (or use breadcrumbs for extra crispiness)
• ¼ cup green onions or chives, finely chopped
• ½ tsp garlic powder
• ½ tsp onion powder
• ¼ tsp salt
• ¼ tsp black pepper
• ¼ cup grated parmesan (optional, for topping)
• Cooking spray or oil (for greasing)
Instructions
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C).
Grease a muffin tin or line a baking sheet with parchment paper.
Step 2: Mix the Batter
In a large bowl, combine mashed potatoes, shredded cheddar cheese, eggs, flour (or breadcrumbs), green onions, garlic powder, onion powder, salt, and black pepper.
Stir until everything is well combined. The mixture should be thick and scoopable.
Step 3: Shape the Puffs
Using a spoon or cookie scoop, portion out the mixture into 12 muffin cups or form small mounds on a baking sheet.
If using a muffin tin, fill each cup about ¾ full.
Optional: Sprinkle the tops with grated parmesan for extra flavor and crunch.
Step 4: Bake Until Golden
Bake for 20–25 minutes, or until the tops are golden brown and the edges are crisp.
