  • 3 boneless skinless chicken thighs
  • 2 3/4 cups chicken broth
  • 1 cup orzo
  • 3/4 cup heavy cream
  • 1 cup spinach (diced)
  • 1/2 cup sun-dried tomatoes (diced)
  • sweet smoked paprika
  • Italian seasoning
  • salt
  • black pepper
  • basil

Instructions

  1. Season the chicken thighs with paprika, Italian seasoning, salt, and pepper.
  2. In a large pot over medium heat, sear the seasoned chicken thighs in sun-dried tomato oil for about 5-7 minutes on each side until golden brown. Remove and set aside.
  3. In the same pot, melt butter and sauté dried shallots, minced onion, and garlic until fragrant. Add diced sun-dried tomatoes, tomato paste, Italian seasoning, paprika, salt, and basil. Stir well.
  4. Pour in chicken broth and add orzo; mix thoroughly.
  5. Return the seared chicken to the pot. Simmer covered for 15-20 minutes until orzo is al dente.
  6. Stir in heavy cream and spinach; cook for a few more minutes until heated through. Top with shredded parmesan before serving.
