Instructions
Step 1: Bake the Fries
Preheat your oven to 425°F (220°C).
Spread the fries on a baking sheet in a single layer.
Toss with olive oil and Cajun seasoning.
Bake according to package instructions, usually 20-25 minutes, until golden and crispy, flipping halfway through.
Step 2: Make the Cheese Sauce
In a medium saucepan, melt butter over medium heat.
Whisk in the flour and cook for 1 minute to form a roux.
Slowly whisk in the milk until smooth and thickened, about 3-4 minutes.
Remove from heat and stir in the cheddar and pepper jack cheeses until melted.
Season with garlic powder, onion powder, smoked paprika, salt, and pepper.
Step 3: Assemble the Voodoo Fries
Place the crispy fries on a serving platter or keep them on the baking sheet.
Pour the hot cheese sauce generously over the fries.
Top with crumbled beef bacon, sliced green onions, and jalapeño slices if using.
Sprinkle a little extra Cajun seasoning over the top for more flavor.
Step 4: Garnish and Serve
Garnish with fresh parsley or a drizzle of ranch dressing if desired.
Serve immediately and enjoy every bold, cheesy bite!
Notes
Use Crinkle-Cut Fries – They hold onto the cheese sauce better.
Season Fries While Hot – Helps the Cajun seasoning stick.
Melt Cheese Off the Heat – Prevents the sauce from becoming grainy.
Customize the Spice – Add more or less Cajun seasoning and jalapeños depending on your heat preference.
Serve Fresh – These fries are best enjoyed hot and crispy right after assembling.
