  • 1 medium yellow onion
  • ½ bell pepper
  • 2 stalks celery
  • 4 cloves garlic
  • ¼ cup apple juice
  • 8 tablespoons butter
  • ½ cup all-purpose flour
  • 4 cups chicken stock
  • 1½ cups water
  • pounds medium raw shrimp
  • 4 ears of corn (kernels removed)
  • 2 cups heavy cream
  • Cajun seasoning to taste

Instructions

  1. Finely chop onion, bell pepper, celery, green onions, and parsley. Mince garlic and remove corn kernels from the cob. Chop turkey turkey bacon into small pieces.
  2. In a large Dutch oven over medium heat, cook turkey turkey bacon until crispy; drain excess fat.
  3. Add chopped vegetables and sauté until softened; then stir in minced garlic.
  4. Deglaze with apple juice, scraping up browned bits from the pot.
  5. Add butter and flour to create a roux; cook until slightly darkened.
  6. Gradually whisk in chicken stock and water; bring to a boil and then simmer for 20 minutes.
  7. Add seasoned shrimp and corn; stir in warmed heavy cream and cook until shrimp are pink.
  8. Adjust seasoning before serving hot.
