  • 4 lobster tails, raw
  • 10 cups water
  • 4 tablespoons butter
  • 1 shallot, minced
  • 2 large carrots, diced
  • 3 celery stalks, diced
  • 2 teaspoons garlic, minced
  • 1 teaspoon fresh thyme, minced
  • 1/4 cup tomato paste
  • 1/4 cup all-purpose flour
  • 1 1/2 cups dry white grape juice
  • 5 cups lobster stock
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Boil water in a large pot and cook lobster tails for 5–7 minutes until bright red. Remove and cool before chopping the meat into bite-sized pieces.
  2. In the same pot, melt butter over medium heat. Sauté shallots, carrots, celery, and garlic until tender (5–7 minutes).
  3. Stir in thyme and tomato paste. Whisk in flour gradually to avoid lumps. Add grape juice while stirring until smooth.
  4. Pour in lobster stock and bring to a simmer; then mix in heavy cream and season with salt and pepper. Let it cook gently for about 15 minutes.
  5. Add chopped lobster meat back into the pot and simmer for another 5 minutes until heated through.
