- 4 lobster tails, raw
- 10 cups water
- 4 tablespoons butter
- 1 shallot, minced
- 2 large carrots, diced
- 3 celery stalks, diced
- 2 teaspoons garlic, minced
- 1 teaspoon fresh thyme, minced
- 1/4 cup tomato paste
- 1/4 cup all-purpose flour
- 1 1/2 cups dry white grape juice
- 5 cups lobster stock
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Boil water in a large pot and cook lobster tails for 5–7 minutes until bright red. Remove and cool before chopping the meat into bite-sized pieces.
- In the same pot, melt butter over medium heat. Sauté shallots, carrots, celery, and garlic until tender (5–7 minutes).
- Stir in thyme and tomato paste. Whisk in flour gradually to avoid lumps. Add grape juice while stirring until smooth.
- Pour in lobster stock and bring to a simmer; then mix in heavy cream and season with salt and pepper. Let it cook gently for about 15 minutes.
- Add chopped lobster meat back into the pot and simmer for another 5 minutes until heated through.
