Ingredients
For the Soup:

1 tbsp olive oil

1 lb ground beef or ground turkey

1 small onion, diced

4 cloves garlic, minced

1 tsp salt

½ tsp black pepper

1 tsp dried oregano
-
1 tsp dried basil

2 tbsp tomato paste

1 can (28 oz) crushed tomatoes

1 can (14.5 oz) diced tomatoes

4 cups beef or chicken broth

8 oz lasagna noodles, broken into bite-sized pieces

1 bay leaf
For the Cheese Topping:

1 cup ricotta cheese
-
½ cup shredded mozzarella cheese

¼ cup grated Parmesan cheese

Salt and pepper, to taste

Chopped fresh parsley or basil, for garnish
Instructions
Step 1: Brown the Meat and Aromatics

In a large pot, heat olive oil over medium heat.

Add ground beef and cook, breaking it up, until browned—about 6 minutes.

Stir in diced onion and garlic. Cook for 2–3 minutes until fragrant and softened.

Add salt, pepper, oregano, basil, and tomato paste. Stir well to coat the meat.
Step 2: Build the Broth

Pour in crushed tomatoes, diced tomatoes, and broth.

Add bay leaf and bring everything to a boil.

Reduce heat and let simmer uncovered for 10 minutes to let flavors meld.
Step 3: Add the Pasta

Stir in broken lasagna noodles.

Simmer for 10–12 minutes more, or until noodles are tender.

Stir occasionally to prevent sticking. Remove bay leaf before serving.
Step 4: Mix the Cheese Topping

In a small bowl, mix together ricotta, mozzarella, Parmesan, salt, and pepper.

Set aside to dollop over the soup just before serving.
Step 5: Serve and Garnish
