For the Lamb Gyro Meat:

  • 1 lb ground lamb

  • 1 small onion, grated

  • 3 cloves garlic, minced

  • 1 tsp dried oregano

  • 1 tsp ground cumin

  • ½ tsp ground coriander

  • ½ tsp smoked paprika

  • ½ tsp salt

  • ¼ tsp black pepper

  • 1 tbsp olive oil

For the Tzatziki Sauce:

  • 1 cup plain Greek yogurt

  • ½ cucumber, grated and drained

  • 2 cloves garlic, minced

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tbsp chopped fresh dill (or 1 tsp dried)

  • Salt and pepper to taste

For the Wraps:

  • 46 soft pita or flatbreads

  • 1 cup shredded lettuce

  • 1 medium tomato, sliced

  • ½ red onion, thinly sliced

  • Feta cheese crumbles (optional)

  • Fresh parsley or mint for garnish


Instructions

Step 1: Make the Tzatziki Sauce

  1. Grate the cucumber, then place it in a clean towel or paper towels and squeeze out as much liquid as possible.

  2. In a bowl, combine Greek yogurt, cucumber, garlic, olive oil, lemon juice, dill, salt, and pepper.

  3. Mix well, taste, and adjust seasoning if needed.

  4. Cover and refrigerate until ready to use (chilling enhances flavor).

Step 2: Prepare the Lamb
5. In a bowl, combine ground lamb, grated onion, garlic, oregano, cumin, coriander, paprika, salt, and pepper.
6. Mix until well combined, but don’t overmix.
7. Heat olive oil in a skillet over medium heat.
8. Add the lamb mixture and cook, breaking it up with a spatula, until fully cooked and lightly browned—about 8–10 minutes.
9. Drain excess fat if needed and set aside.

Step 3: Warm the Pitas
10. Warm pita bread in a dry skillet or wrap in foil and place in a 350°F oven for 5–7 minutes until soft and pliable.

Step 4: Assemble the Gyros
11. Lay out a warm pita and add a generous spoonful of lamb.
12. Top with lettuce, tomato slices, red onion, and crumbled feta.
13. Spoon tzatziki sauce over the top.
14. Garnish with parsley or mint and wrap into a fold or roll.

Step 5: Serve & Enjoy
15. Serve immediately with extra tzatziki on the side, and perhaps a side of lemon potatoes or Greek salad for a complete meal.

Notes

Drain the Cucumber – This keeps your tzatziki from getting watery.
Don’t Overwork the Meat – Mix gently to keep the lamb juicy and tender.
