Ingredients

For the Tots:
• 2 cups riced cauliflower (fresh or frozen and thawed)
• 1 large egg
• ½ cup shredded cheddar cheese
• ¼ cup grated Parmesan cheese
• ¼ cup almond flour
• 1 clove garlic, minced
• ½ tsp onion powder
• ½ tsp dried parsley
• Salt and pepper to taste

Optional Add-ins:
• 1 tbsp chopped chives or green onions
• ½ tsp paprika or chili powder (for a little heat)
• 1 tbsp nutritional yeast (for extra umami)

For Serving:
• Sugar-free ketchup or ranch dip
• Greek yogurt with herbs
• Spicy mustard or cheese sauce


Instructions

Step 1: Prep the Cauliflower

  1. If using fresh cauliflower, pulse florets in a food processor until they resemble rice.

  2. Steam or microwave riced cauliflower until tender (about 3–4 minutes).

  3. Let cool, then place in a clean kitchen towel and squeeze out as much moisture as possible. This step is key for crispy tots.

Step 2: Make the Mixture

  1. In a mixing bowl, combine the riced cauliflower, egg, cheddar, Parmesan, almond flour, garlic, onion powder, parsley, salt, and pepper.

  2. Mix until fully combined. The mixture should hold together when pressed.

Step 3: Shape the Tots

  1. Preheat oven to 400°F (200°C).

  2. Line a baking sheet with parchment paper.

  3. Scoop about 1 tablespoon of mixture and shape into a small cylinder or oval tot.

  4. Place on the baking sheet and repeat until all the mixture is used.

Step 4: Bake Until Golden

  1. Bake for 18–20 minutes, flipping halfway through, until the tots are golden brown and crispy on all sides.

  2. For extra crispiness, broil for 1–2 minutes at the end—but watch closely to prevent burning.

Step 5: Serve & Dip

 

  1. Let cool slightly and serve warm with your favorite keto-friendly dipping sauce.

  2. Garnish with chopped herbs or a sprinkle of Parmesan if desired.
