6 large eggs
1½ cups shredded mozzarella cheese
1 cup cooked ground beef or sausage
½ cup chopped cooked chicken or beef
½ cup grated parmesan cheese
1 tsp Italian seasoning (optional for a pizza flavor twist)
½ tsp garlic powder
½ tsp salt
¼ tsp black pepper

Optional Toppings:
Extra shredded cheese for topping
Mini pepperoni or beef pepperoni slices
Crumbled cooked bacon
Chopped beef sticks or jerky bits


Instructions

Step 1: Preheat & Prep
Preheat your oven to 375°F (190°C).
Grease a 12-count muffin tin with non-stick spray or use silicone liners for easy release.

Step 2: Mix the Base
In a large mixing bowl, crack the eggs and whisk until smooth.
Add in shredded mozzarella, cooked ground beef, chopped chicken or beef, parmesan cheese, and seasonings.
Stir until everything is well combined.

Step 3: Fill the Muffin Tin
Spoon the mixture evenly into each muffin cup, filling about ¾ of the way full.
Top each with optional ingredients like pepperoni or extra cheese for a pizza-like topping.

Step 4: Bake
Bake for 18-22 minutes, or until muffins are set and golden on top.
Let cool for 5 minutes before removing from the tin.

Step 5: Serve & Enjoy
Serve warm or cool completely and refrigerate for later.
