  • 2 large cucumbers (sliced into half-moons or chopped)

  • 23 jalapeños (seeded and finely chopped)

  • 4 oz cream cheese (softened)

  • ¼ cup plain Greek yogurt or sour cream

  • ¼ cup shredded cheddar cheese

  • 2 slices cooked turkey bacon or beef bacon (chopped)

  • 1 clove garlic (minced)

  • 1 tbsp lemon juice or white vinegar

  • Salt and black pepper to taste

Optional Add-Ins:

  • 2 tbsp chopped green onions or chives

  • 1 tbsp chopped fresh parsley

  • Dash of hot sauce for extra heat

For Garnish:

  • Extra crumbled bacon

  • Shredded cheese

  • Jalapeño slices

  • Fresh herbs


Instructions

Step 1: Prepare the Cucumbers

  1. Wash and slice cucumbers into bite-sized pieces.

  2. Lightly salt them and let sit for 5 minutes to draw out excess moisture.

  3. Pat dry with a paper towel before mixing.

Step 2: Make the Creamy Dressing

  1. In a bowl, mix softened cream cheese and Greek yogurt until smooth and creamy.

  2. Add lemon juice, garlic, salt, and pepper. Mix to combine.

  3. Stir in shredded cheddar cheese and chopped jalapeños.

Step 3: Combine the Salad

  1. Add cucumbers to the creamy mixture and toss gently to coat evenly.

  2. Fold in chopped bacon and green onions or parsley if using.

  3. Taste and adjust seasoning as needed.

Step 4: Garnish & Serve

 

  1. Transfer to a serving bowl and top with extra bacon bits, cheese, and jalapeño slices.

  2. Serve immediately or chill for 10-15 minutes for a more cohesive flavor.

Soften the Cream Cheese – Let it sit at room temperature for easier mixing.
