Ingredients
- 4–5 medium-large bell peppers
- ½ pound lean ground beef or ground turkey
- 1 cup cooked brown rice
- ½ cup finely chopped yellow onion
- 15 oz can diced tomatoes
- 8 oz can tomato sauce (divided)
- 2 teaspoons dried Italian seasoning
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 cup shredded cheese (cheddar or mozzarella, divided)
Instructions
- Prepare the bell peppers by slicing off the tops and removing membranes and seeds.
- Optionally brown the ground beef in the Instant Pot using the Sauté function. Add chopped onion if desired.
- In a mixing bowl, combine ground beef (browned or uncooked), cooked rice, chopped onion, diced tomatoes, ¼ cup of tomato sauce, Italian seasoning, garlic powder, salt, black pepper, and half of the cheese. Mix well.
- Pour 1 cup of water into the Instant Pot and place the metal trivet inside.
- Stuff each pepper with the filling mixture and place them upright on the trivet. Top each with tomato sauce.
- Seal the lid and cook on high pressure for 16 minutes (if using uncooked meat) or 8 minutes (if browned).
- Release pressure carefully and check that each pepper's center reaches at least 165°F. Top with remaining cheese and cover briefly to melt before serving.
