  • 1 1/2 pounds russet potatoes (quartered)
  • 1 package (12.8 oz) smoked chicken sausage (sliced)
  • 1 1/2 pounds large shrimp (shell-on)
  • 3 ears corn (halved)
  • 4 cloves garlic
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 2 tablespoons Cajun seasoning (or Old Bay seasoning)
  • 1 tablespoon hot sauce
  • 3 bay leaves
  • 12 oz light beef broth (or water)
  • 1 1/2 cups water
  • 1/2 cup unsalted butter (melted)
  • 1 teaspoon garlic powder
  • 1 teaspoon Cajun seasoning (or Old Bay)
  • Fresh parsley leaves (chopped)
  • 2 lemons (cut into wedges)

Instructions

  1. Gather all ingredients: quarter potatoes, slice chicken sausage, halve corn, and cut lemons into wedges.
  2. Add quartered potatoes to the bottom of the Instant Pot.
  3. Layer sliced chicken sausage on top of the potatoes followed by halved corn.
  4. Sprinkle onion powder, garlic powder, Cajun seasoning, minced garlic cloves, hot sauce, and bay leaves evenly over the layers.
  5. Pour in light beef broth and water without disturbing the layers.
  6. Secure the lid and set to cook on high pressure for 2 minutes.
  7. After cooking, perform a quick release by turning the valve to release steam.
  8. Add shell-on shrimp to the pot, close the lid again, and cook on high pressure for an additional minute.
  9. Once finished cooking, perform another quick release and stir in melted butter along with remaining seasoning. Serve hot with chopped parsley and lemon wedges.
