Ingredients
- 2 pounds lean ground beef
- ¾ cup finely chopped yellow onion
- 3 cloves garlic (minced)
- ½ cup Panko breadcrumbs
- 2 large eggs
- 3 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 2 ½ pounds Yukon gold potatoes
- 3 tablespoons unsalted butter
- ½ cup milk
Instructions
- Gather ingredients and quarter Yukon gold potatoes.
- In a mixing bowl, combine ground beef, onion, garlic, breadcrumbs, eggs, ketchup, Worcestershire sauce, thyme, garlic powder, salt, and pepper. Mix until well combined.
- Shape the mixture into a loaf and place it on the trivet inside the Instant Pot.
- Add water into the pot for steaming and arrange potatoes around the meatloaf.
- Close the lid securely and set to high pressure for 30 minutes; allow natural release for about 10 minutes before releasing any remaining pressure.
- For the glaze, mix ketchup with brown sugar and apple cider vinegar.
