  • 2 pounds lean ground beef
  • ¾ cup finely chopped yellow onion
  • 3 cloves garlic (minced)
  • ½ cup Panko breadcrumbs
  • 2 large eggs
  • 3 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 2 ½ pounds Yukon gold potatoes
  • 3 tablespoons unsalted butter
  • ½ cup milk

Instructions

  1. Gather ingredients and quarter Yukon gold potatoes.
  2. In a mixing bowl, combine ground beef, onion, garlic, breadcrumbs, eggs, ketchup, Worcestershire sauce, thyme, garlic powder, salt, and pepper. Mix until well combined.
  3. Shape the mixture into a loaf and place it on the trivet inside the Instant Pot.
  4. Add water into the pot for steaming and arrange potatoes around the meatloaf.
  5. Close the lid securely and set to high pressure for 30 minutes; allow natural release for about 10 minutes before releasing any remaining pressure.
  6. For the glaze, mix ketchup with brown sugar and apple cider vinegar.
  7. Brush glaze onto meatloaf and sauté for a few minutes if desired for caramelization.
  8. Remove potatoes from the pot; mash with butter, warmed milk, salt, and pepper until smooth.
  9. Serve slices of meatloaf alongside creamy mashed potatoes.
