Ingredients
- 1 tablespoon olive oil
- 1 cup finely chopped yellow onion
- 1 cup finely chopped carrot (2–3 carrots)
- 1 green bell pepper (chopped)
- 3 cloves garlic (minced)
- 1 ½ cups dry green lentils (rinsed and drained)
- 15 ounce can tomato sauce
- ¼ cup ketchup
- 2 tablespoons pure maple syrup (or brown sugar)
- 1 tablespoon apple cider vinegar
- 2 teaspoons yellow mustard
- 1 teaspoon chili powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 ½ cups vegetable broth (or chicken broth or water)
- Toasted burger buns
- Red onion or other toppings as desired
Instructions
- Sauté the vegetables: In the Instant Pot, heat olive oil and sauté chopped onion, carrots, and bell pepper until softened (about 4 minutes). Add minced garlic and cook for another 30 seconds. Cancel sauté function.
- Combine ingredients: Stir in rinsed lentils, tomato sauce, ketchup, maple syrup, apple cider vinegar, mustard, chili powder, salt, black pepper, and vegetable broth. Mix well.
- Pressure cook: Close the lid and set to high pressure for 5 minutes. It will take about 15 minutes to reach pressure before cooking begins.
- Release pressure: Let pressure release naturally for 10 minutes before carefully venting any remaining steam.
- Serve: Stir the mixture well and serve on toasted buns with your choice of toppings.
