  • 4 ribs celery (chopped)
  • 3 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 1 bay leaf
  • ¾ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • 8 cups low sodium chicken broth
  • 1 pound boneless, skinless chicken breasts
  • 6 ounces egg noodles
  • chopped fresh parsley (optional, for serving)

Instructions

  1. Press the sauté button on the Instant Pot and heat olive oil. Add chopped onion, carrots, and celery; cook until softened (about 3 minutes). Stir in minced garlic and press 'Cancel.'
  2. Add oregano, thyme, bay leaf, salt, pepper, and broth; stir well. Nestle chicken breasts into the mixture.
  3. Close the lid, set valve to sealing position, and pressure cook on high for 7 minutes.
  4. Allow natural release for 10 minutes; then carefully vent any remaining pressure.
  5. Shred chicken once pin drops down; remove bay leaf.
  6. Press 'Cancel,' select 'Sauté,' add egg noodles to pot, simmer for about 5 minutes until tender.
  7. Stir shredded chicken back into soup; taste and adjust seasonings as needed before serving garnished with fresh parsley.
