- 3 cloves garlic (minced)
- 1 teaspoon dried oregano
- ½ teaspoon dried thyme
- 1 bay leaf
- ¾ teaspoon salt (or to taste)
- ¼ teaspoon black pepper
- 8 cups low sodium chicken broth
- 1 pound boneless, skinless chicken breasts
- 6 ounces egg noodles

Instructions
- Press the sauté button on the Instant Pot and heat olive oil. Add chopped onion, carrots, and celery; cook until softened (about 3 minutes). Stir in minced garlic and press 'Cancel.'
- Add oregano, thyme, bay leaf, salt, pepper, and broth; stir well. Nestle chicken breasts into the mixture.
- Close the lid, set valve to sealing position, and pressure cook on high for 7 minutes.
- Allow natural release for 10 minutes; then carefully vent any remaining pressure.
- Shred chicken once pin drops down; remove bay leaf.
- Press 'Cancel,' select 'Sauté,' add egg noodles to pot, simmer for about 5 minutes until tender.
- Stir shredded chicken back into soup; taste and adjust seasonings as needed before serving garnished with fresh parsley.
