  • 1 tablespoon olive oil
  • 1 cup chopped yellow onion
  • 3 cloves garlic (minced)
  • 4 medium carrots (chopped)
  • 1 ½ cups long grain brown rice (uncooked, rinsed well and drained, do not substitute other types of rice)
  • 1 tablespoon Dijon mustard
  • 1 ½ teaspoons garlic powder
  • 1 teaspoon Italian seasoning
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 ¾ cups low sodium chicken broth (one 14.5 ounce can)
  • 1 pound boneless skinless chicken breasts
  • 1 cup frozen peas (cooked according to package directions)

Instructions

  1. Heat olive oil in the Instant Pot using the sauté function. Add chopped onion and sauté until softened, about 3 minutes. Stir in minced garlic and cook for another 30 seconds before turning off the pot.
  2. Add chopped carrots, rinsed brown rice, Dijon mustard, garlic powder, Italian seasoning, salt, black pepper, and low sodium chicken broth. Stir well.
  3. Layer boneless skinless chicken breasts on top without stirring.
  4. Secure the lid and set the pressure valve to sealing. Cook on high pressure for 20 minutes.
  5. Allow a natural release for 10 minutes before performing a quick release.
  6. Remove chicken; let rest before chopping into bite-sized pieces. Stir back into the rice mixture along with cooked peas.
  7. Serve hot.
