  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 tablespoons cold unsalted butter
  • ¾ cup milk
  • 1 tablespoon olive oil
  • 2 pounds bone-in chicken thighs
  • 1 small yellow onion, chopped
  • 3 ribs celery, chopped
  • 3 medium carrots, chopped
  • 2 cloves garlic, minced
  • 3 ½ cups low sodium chicken broth
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • 1 cup frozen peas
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Instructions

  1. In a mixing bowl, combine flour, baking powder, and salt. Mix in cold butter until crumbly. Gradually add milk until a dough forms; set aside.
  2. Set the Instant Pot to 'Sauté' mode. Add olive oil and butter, then sauté onion, celery, carrots, and garlic for about 3-4 minutes.
  3. Add chicken thighs to the pot with chicken broth, thyme, bay leaves, salt, and pepper; stir well.
  4. Close the lid and set to 'Manual' or 'Pressure Cook' on high for 8 minutes. Quick release the pressure when done.
  5. Carefully open the lid and shred the chicken before returning it to the pot. Drop spoonfuls of dumpling dough over the mixture.
  6. Close the lid again and cook on high pressure for another 5 minutes. Allow for a natural release of pressure for about 5 minutes before quick releasing.
  7. Mix cornstarch with water in a small bowl until smooth, then stir into the pot along with frozen peas and let simmer until thickened.
  8. Serve hot in bowls and enjoy!
