  • 2 pounds boneless beef chuck roast (or beef stew meat)
  • 2 tablespoons olive oil

  • 3 cloves garlic (minced)
  • 3 cups unsalted beef stock
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 4 carrots (cut into 1-inch pieces)
  • pounds Yukon gold potatoes (cut into 1½-inch pieces)
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Instructions

  1. Cut the beef into cubes if using a chuck roast.
  2. Brown half of the beef in heated olive oil, seasoning with salt and pepper; remove from pot.
  3. Repeat with remaining beef.
  4. Sauté onions and garlic until softened.
  5. Deglaze the pot with beef stock and incorporate browned bits.
  6. Add tomato paste, Worcestershire sauce, herbs, and return beef to the pot.
  7. Layer carrots and potatoes on top without stirring.
  8. Pressure cook on high for 35 minutes with natural pressure release.
  9. Thicken stew with cornstarch mixture before serving.
