Instructions
- In a Dutch oven, melt butter over medium heat. Sauté diced onions for 3-4 minutes until soft, then add sliced mushrooms and cook for an additional 5 minutes.
- Stir in dill weed, paprika, low-sodium soy sauce, and vegetable broth. Reduce heat to medium-low, cover, and simmer for 15 minutes.
- Mix cornstarch with whole milk in a small bowl until smooth, then stir into the soup. Cover and simmer for another 10 minutes.
- Add sour cream, lemon juice, parsley, salt, black pepper, and cayenne pepper; heat through without boiling for about 3 minutes.
